
Oaxaca al Gusto: An Infinite Gastronomy by Diana Kennedy is on my bookshelf. This is more than a cookbook – the recipes are from Oaxacan cooks across the state of Oaxaca. Kennedy did extensive travel and research gathering traditional dishes from the state that was divided into ten regions. I return to this book frequently to learn about the ingredients and process of these traditional foods.
