From My Bookshelf

Oaxaca al Gusto: An Infinite Gastronomy by Diana Kennedy is on my bookshelf. This is more than a cookbook – the recipes are from Oaxacan cooks across the state of Oaxaca. Kennedy did extensive travel and research gathering traditional dishes from the state that was divided into ten regions. I return to this book frequently to learn about the ingredients and process of these traditional foods.

“Trying to record the ethnic foods as well as the more sophisticated recipes from urban centers presented an enormous challenge and responsibility. Oaxaca is the most mountainous and diverse state of Mexico, with many different cultural and linguistic groups, often living in areas difficult to access, and with an incredible biodiversity.”

From Diana Kennedy’s introduction to this book; August 26, 2008.
